Baoji is a prefecture-level city in southwest Shaanxi
province, China. Surrounded on three sides by hills, Baoji is in a valley
opening out to the east. Its location is strategic as it controls a pass on .To
the South of the of Baoji is the beginning of the plank road in the Qinling
Mountains, there are also several natural sites, like the Jialing Jiang
Fountainhead with it small waterfalls and forests. To the north is Bei Puo, a
giant hill made of loess with a great view of the city and dotted with small
farming villages that you can get some delicious local cuisine boasting numerous
cooking techniques, such as stir-frying, frying, stir-frying before stewing, and
braising.
Famous dishes include Stir-fried Diced Chicken with Chilli
and Peanuts, Stir-fried Bean Curd in Hot Sauce, Fish flavoured Shredded Pork,
Rice Crusts and Sliced Pork, Stir-fried Sliced Beef, etc.
Baoji is characterized by the continental monsoon climate. The seasons here are easily distinguished and the sunlight is abundant. The annual average temperature ranges from 8C to 13C, and the yearly average precipitation from 610 to 697mm.
Baoji is situated in the meeting place of three provinces, namely Shaanxi, Gansu and Sichuan.
Three railways, Longhai, Baochen, Baozhong, also meet there. It is the third big 'Cross' along the Longhai Railway. Central to highways in all directions forming a network of four main highways and 110 branch roads linking Xi'an in the east, Lanzhou in the west, Yinchuan in the north and Chendu in the south. It is a hub of communication link southwest and northwest of China. It is only and 1.5 hours drive from Xi' an International Airport by the XiBao highway.
