Chaozhou is a prefecture-level city in eastern Guangdong
province, People's Republic of China. It borders Shantou to the south, Jieyang
to the southwest, Meizhou to the northwest, the province of Fujian to the east,
and the South China Sea to the southeast.
Crossed by the Tropic of Cancer in the central part of its
continental portion, tropical and sub-tropical Guangdong has a climate marked by
high temperature and plentiful rainfall. It has the highest mean temperature of
28C in July (the hottest month in a year) and 13C in January (the coldest month
in a year). The greater part of the province has a mean annual precipitation of
about 1,500-2,000 mm. and 140-160 rainy days. The coastal regions are frequently
visited by typhoons between July and August. In Chaozhou cuisine seafood
features prominently often enhanced by piquant sauces, such as tangerine jam for
steamed lobsters and broad bean paste for fish. Duck and goose are other
Chaozhou favourites; the region's famous spicy goose is served with garlic and
vinegar sauce.
